A garage is a low-dollar job with a low-dollar margin, so the tolerance for estimating error is smaller here than on almost anything else you bid. Get one trade a little wrong, and you have not just trimmed your profit; you have erased a chunk of it.
The trouble is that the numbers driving a garage bid are not written on the plans. Slab volume has to be computed from area and thickness. Framing has to be counted stud by stud off the elevations. The roof is bigger than the floor it covers and has to be adjusted for pitch. Drywall and insulation are square-footage calculations. Every one of those is a place to be a few percent off. A few percent off on several trades at once is how a simple garage ends up losing money.

A $3 per square foot mistake is easy to make. It might be one wall built a foot too short, or a roof priced flat when it really has a slope. In a normal two-car garage, that adds up to about a third of your profit, and you usually don't notice until the concrete and lumber are delivered and the bills arrive.
Garages also carry code costs that contractors often forget to price. Attached garages need fire-rated drywall between the garage and the house: at least ½-inch gypsum board on the shared wall and 5/8-inch Type X on the ceiling if there is living space above. Both are required under IRC Section R302.6. Leave this drywall off the bid, and it comes out of your margin at framing inspection.
